Slowly But Surely doufeu



Time heals all wounds, it is said. Time also helps people gain wisdom and experience. Time is something that everyone wants more of.  But one other thing that time does is make really good food. The idea of slow cooking, that is letting food cook over a period of time, may seem daunting to many cooks especially those just starting to venture into the realm of cuisine and the kitchen. What if it burns? What if after all that time it turns out all wrong? That is why there is the doufeu. It is a slow cooking pot whose name literally means “gentle fire”.

The doufeu has been around for quite a while. It is also known as a French oven that is primarily used to cook food slowly. In early times the covered pot was buried in burning coals to wrap it in heat and then liquid was occasionally poured in to keep the food inside moist. Today, with the modern conveniences of the kitchen, the doufeu has been designed to perform on almost all heat sources and for ease of use. Le Creuset casserole dishes come with a lid that can hold ice cubes while the food is cooking so that the moisture from the melted ice cubes will drop into the food and baste the meat and vegetables. In this manner, the flavors and the juiciness of the food are preserved even throughout the long cooking process. The result is a soft melting deliciousness that is often tricky to achieve with regular cookware.
 
Le Creuset offers this special cookware from a size of 2.5 quarts up to 9.5 quarts. The 2.5-quart size has been said to be perfect for cooking for two people. Any leftovers, if indeed ay will be left after tasting the results, can just as easily be stored in the fridge and then brought out again later for reheating.
 
Slow cooking is a great alternative to the quick easy stir-fry dishes that often pepper the menu choices of those who feel they are too busy to bother with roasts and stews and hotpots.  In a way, slow cooking is even more efficient. Just pop in the required ingredients, put the pot on the stove, follow the instructions on the ice cubes and then set the timer. As the food takes care of itself, one can then freely engage with other forms of business or chores with only minimal peeks into the kitchen.
 
And when the food is done, there is even no need to think about serving or presentation.
